Last night, Lauren and I went to a very fancy restaurant in Kansas City,  and ordered "Alaskan Halibut" and "Alaskan Salmon". I'd been to this restaurant before and enjoyed it very much, but I noticed that the food arrived with the shimmer of oil. It made me realize that I never noticed that with any of Chef Matt's meals. I know it's a lot easier to cook with oil and so I really appreciate that he makes great dishes that were cooked low-fat.

 

When we were badgering Tess with questions before the trip, Lauren said we favored a "heart-healthy" menu and she assured us that the Chef was very health-oriented. Well, that is a true story. I just wanted to thank you and Matt again for such a great trip and to compliment the Chef for not causing any weight gain on my part, in spite of Eggs Benedict & nightly desserts, whoa doggies!

I hope the cook book is really going to happen, please say it's true.

Cruising at night to a quiet anchorage - the M/V Discovery.

Meticulously fitted to combine the finest blend of luxury, comfort and utility, the 65-foot classic working yacht gently sails you into one of the world's richest marine environments. Named after one of Captain Cook's ships, the Discovery's atmosphere is one of charm and style. Because of its small size, the Discovery can sail into quiet coves and navigate ice-bound channels that larger boats must avoid, letting Discovery passengers get an up close and personal view of glaciers and marine wildlife that is simply not possible on a larger cruise ship.

The lower deck includes sleeping accommodations for up to 12 guests in 6 cabins, plus crew quarters, two bathrooms with hot showers, and stowage space. Guests can readily view and photograph the panoramic scenery and marine life from the ship's complete walk-around deck and expansive windows. Unlike the cumbersome cruise ship giants, the Discovery's size enables access to Alaska's lesser traveled, more intimate inside passages. Well equipped for travel in Alaska's wilderness, the Discovery safely charts the Sound's remote waterways.

A tantalizing menu of carefully prepared, home-cooked meals await you on the Discovery . The upper deck salon is surrounded by large windows creating a magnificent natural dinner theater. Depending on the season, meals feature fresh local seafood such as Copper River king salmon, sockeye salmon and or halibut, oysters, shrimp, and rockfish. The tastefully prepared main courses are served with fresh quality vegetables, home made breads & rolls, soups, and fruit (organically grown ingredients are used whenever possible). Beverages include fine wines, quality beer, juice and milk.

The Discovery is fully Certified and inspected by the US Coast Guard. Powered by twin diesel engines and two generator sets, safe travel and reliable electrical power are ensured. Captain Rand and his experienced crew are concerned with your safety and trained to ensure it.

The Discovery's traditional design maximizes use of the interior space. Sleeping quarters are practical, comfortable, and private.
